Buza Ice Cream is first and foremost a dream!
Adam Ziv from Kibbutz Sasa traveled the world, following his dream to learn how to make ice cream. He worked in various ice-cream parlors around the world and learned the profession. His longest internship was in Italy, at a small ice-cream parlor in a village near Florence. When he returned to Israel, his dream was clear: to open a high-quality ice-cream parlor in a Galilean village and make ice-cream with a Galilean touch, from the best possible natural ingredients. In his search for the perfect location, Adam met Alaa Sweetat, owner of Aluma restaurant in Tarshiha, and their partnership was set instantly. And so, Buza (Arabic for ice cream) was born, an Arab-Jewish collaboration between Adam from Kibbutz Sasa and Alaa. Buza’s Galilean roots are strong – in the love for raw materials, tastes, and smells. That is the foundation for its ice cream – hand-made daily with much care and from the best and freshest raw materials.
Ice cream is not just one thing. Like colors, songs and people Buza’s ice-creams have different characters. For example, Rich Chocolate – stable and serious, a dignified veteran, and Grapefruit Arak – young, fresh and surprising, or Mascarpone and Figs – you can’t really tell if it’s from here or from somewhere completely different, and Vanilla – nostalgic ice-cream, makes you think of childhood, and many more.
