Tip for gluten-free hamantash. We recommend using the Freee gluten-free flour. For vegan hamantash, use vegan butter and almond milk.

Freeze the hamantash before baking for about half an hour and then put them straight in the oven. Why? When you put the frozen dough in the oven, a crust is created that keeps the dough from spreading.
Recipe for Salted Pesto Hamantash Filled with Fried Onions & Cheese Courtesy of Alto – A Rural Dairy in Kibbutz Shomrat
For the Dough:
- 250 grams white flour
- 185 grams of cold butter, cut into cubes
- 6 grams salt
- 35 grams pesto
For the Cheese:
- 70 grams of cold butter, cut into cubes
- 70 grams of white flour
- 50 grams Alto goat cheddar
For the Filling:
- Fried onions
Process the flour, butter, and salt in a food processor. Add the pesto. Place in the fridge until completely cooled.
Remove the dough from the fridge, roll it out on a thin sheet, and cut out circles.
Place fried onions inside.
Close the edges to form a hamantash
Bake partially.
Sprinkle with cheese and return to full baking.
