Ingredients:
- 270 grams of ground almonds
- 210 grams of potato flour
- 240 grams of butter
- Pinch of salt
- 120 grams of sugar
- Egg
For Filling:
- Jam (for jam-filled cookies)
- Dulce de leche and ground coconut (for Alfajores)
Preparation:
- In a food processor (or in a mixer with a dough hook), process the ingredients, without the egg, into a crumbly mixture. Add the egg and knead into a uniform dough.
- Cool for about an hour wrapped in cling film. Important step!!!
- Roll out the dough with the help of the potato flour and cut into circles.
- For jam cookies, we will also pinch an inner part with half the number of circles.
- Bake in a preheated oven at 160 degrees for about 15-20 minutes, until lightly golden.
- We will join the cookies with dulce de leche and roll in the coconut for Alfajores. Or spread jam on a whole cookie, sprinkle powdered sugar on, and press them together.
