Ma’amoul Zard – Noor Restaurant
Ma’amoul cookies are basically joy, unity, and simplicity. We inherited the recipe from the grandmothers who would gather together with all the neighborhood women each holiday party and cook the cookies. The work together went on for hours and hours, accompanied by folk tales and lots of laughs and poetry. The smell that characterizes the baking of these cookies in the taboon transmitted to each passing by the holiday feeling. The younger generation still continues the same tradition but in a smaller number of people.
Ingredients:
- 1 kg of white flour
- 300 grams of compliment
- A quarter cup of corn oil
- A quarter teaspoon of milk
- A glass of lukewarm water
Filling:
- Fresh dates
- Margarine / butter
- Bharat
Preparation Method:
- Put flour and butter in our hands until crumbs are formed. Add the milk and water and knead until smooth and even.
- Set aside the dough and meanwhile prepare the date filling.
- Peel the dates, grind them together with the butter and mohair.
- Make small balls. Roll out the dough, cut it into circles. Inside each circle, a ball of dates is placed.
- Fold the dough and with the help of a pinch of cake make uniform and tight lines. Tighten the sides well. Preheat the oven to 180 degrees and bake until golden.
