The Recipe Courtesy of Yaarit ― The Art of Taste
Melt in the microwave:
- 120 grams of butter
- 200 grams of dark chocolate
Whip to a soft, light and thick foam:
- 3 whole eggs
- 150 grams of demerara sugar
We will add:
- vanilla
- the melted chocolate mixture
- whipped foam
- and mix together
Then add:
- 20 grams of cocoa
- 150 grams of almond powder
- 20 grams of potato/cornflower flour
- 10 grams of baking powder
- and whip a little
Finally add:
- 100 grams of chopped white chocolate
- 100 grams of chopped milk chocolate
- 50 grams of chopped pecans
- and mix everything together
Arrange cookies (should make about 60) on a baking dish with two spoons, sprinkle a touch of Atlantic salt on top and bake in a preheated oven at 170 degrees Celsius for about 12 minutes. Be careful not to overbake!
These are absolutely the perfect cookies for Passover and all year round!
