During the cooking, Mimi will share with you not only her culinary wisdom, but also her personal story – how she grew up in Akko, learned to cook from the women in her family, and how food became her way of preserving heritage and connecting people.

In this workshop you will learn to prepare one of the most special dishes in Akko – Teridi.
Teridi is a rich and bold dish that combines thick yogurt, fragrant garlic, crispy pita bread, warm and generous butter, and a delicious layer of hummus. It is a dish that symbolizes the spirit of Akko – warm, layered, and full of surprises.
Mimi will guide you step by step through the preparation of the dish, sharing the stories behind the ingredients and how Teridi became a local treasure.
For a starter, prepare Kubania – a beloved vegetarian dish made with bulgur, potatoes, and homemade tomato paste and hot pepper – deep in flavor and exciting.
In addition, prepare a fresh and colorful salad from fresh vegetables lovingly selected from the Akko market.
For a main course, learn to make authentic Maqluba – a dramatic dish of upside-down rice with vegetables and spices.
And for dessert – we will end on a sweet note with Halawet el Jibn, a traditional dessert filled with cheese, soft and fragrant, with rose water – a true Akko classic.
