Flora, an artisanal dairy located in the village of Lotem in the Galilee, specializes in the production of cheeses from sheep and goat milk, and hosts tastings and workshops alongside a current gastronomic perspective.
The workshops at Flora are conducted under the personal guidance of Azi Mitrani, the dairy’s head, who has 15 years of experience in the best dairies in our country.
The workshops offers:
Making Circassian and knafe cheese, gastronomic content meetings in the world of cheese and the world of food in Clil ― workshops on tasting cheeses, anthropology, philosophy and food science, a deep dive into basic gastronomic products such as olive oil, coffee, cocoa, wheat, etc.
The workshops are accompanied by a glass of wine and a tasting of local cheeses.
Michal Benishti, a gastronome with a master’s degree in gastronomic sciences from Italy and a former Strauss gastronome, fulfilled her dream and established the “Flora Flourishing Cheese” Dairy in a dreamy corner of the Galilee. Together with the cheesemaker Azi Miterni, they run a dairy that fulfills the philosophical path she has adopted ― good, clean and fair food that combines quality, taste, and sustainability values.
