Berbere Recipe — Sweet Wheat Stew — Courtesy of Galil EAT
Traditional Christmas Dish — Courtesy of Rodeina, cook from Galil EAT
Ingredients:
1 Kg Wheat
½ Tablespoon Ground Anise
¼ Tablespoon Ground Cinnamon
A bowl of dates, without the core, cut into 5 cm cubes
A bowl of dried fruit cut into 5 cm cubes
A bowl of walnuts
A bowl of peanuts or another crushed nut
A bowl of coated candy (chocolate lentils) or any other candy you want
A bowl of pistachios
Bowl of barley or pieces of halva
Preparation Method:
Rinse the wheat and place it in a large pot. Fill the pot with 2 liters of water. Add the anise and cinnamon and mix well.
Cover the pot, place it on the stove and bring to a boil. Lower the heat and continue to cook for about three hours, until the wheat is very soft but not decomposed and the texture is similar to porridge. While cooking, it is advisable to check from time to time if you need to add water and you should also mix the wheat often so that it does not burn.
Remove from the heat and allow the stew to cool for at least 30 minutes. Serve at room temperature, or when it is cooled down.
Transfer 3 tablespoons of wheat to a clean bowl and garnish with any topping that suits you.
Happy Holidays & Enjoy!
