In 2008 he joined forces with Dan Yoeli (Jullius), liquor expert and owner of a Netherlands distillery, and together they opened the first boutique distillery in Israel. Two years after its opening, Yoeli passed away from an illness and Har Gil carried out the endeavor himself and decided to name the distillery after his good friend.
In 2012 Har Gil contacted dr. Herbert Rosh, a world-renowned German distiller, plans a new distillery, custom-made to make alcohol from Israeli fruit. After a year and a half of meticulous planning, distillery parts were imported from Germany and assembled in the Galilee by dr. Rosh and his team. Today, Jullius Distillery is considered to be one of the most advanced distilleries of its kind in the world. International professionals rave Jullius’ products, successfully sold in Israel and worldwide.
Today, Jullius Distillery is at Kibbutz Hanita, facing intoxicating views, where Joov makes grape grappa in his German distiller machine, as well as and schnapps from mandarins, oranges, and citron.
All of the manufacturing processes are manual and completely natural, from selecting raw materials to bottling and packing.
Combined with small distillation cycles, these manufacturing principles make each Jullius bottle a one-of-a-kind, high quality, and rare creation, complete with a serial number and signature.
Jullius Distillery keeps to sustainability principles and is one of the only distilleries in the world operated by solar energy. All Jullius products are Kosher.
