Delicate Folds & A Slow Cooker – A Cooking Workshop with Mimi Khatib at Beit Elfarasha
Workshop, Meal & Stories
Old Akko

Some dishes take time, skilled hands, and a lot of patience. Shish barak, for instance, consists of tiny dumplings folded one by one; Sheikh al-mahshi involves hollowing out zucchini, stuffing them, and slow-cooking them in yogurt until they are tender and infused with flavor.
At Beit Elfarasha in Old Akko, Mimi Khatib invites you into her kitchen for an up-close look at Akko-style cooking secrets and the stories and traditions behind these dishes. As you chop, stuff, fold, and cook, Mimi will share her Akko—and the memories and tales woven into the local cuisine.
What will we prepare together?
- Wild chicory – A seasonal green gathered after the first winter rains
- Fresh market salad – Made with crisp, seasonal vegetables
- Vegetarian kubbeh – A mixture of bulgur and spices, kneaded and hand-shaped
- Shish barak – Tiny dumplings, folded one by one
- Sheikh al-mahshi – Zucchini stuffed with a mixture of meat, pine nuts, and onions, cooked in a yogurt sauce
- Halawet el-jibn – Soft, sweet cheese rolls filled with cream.
At the end of the workshop, we will sit down together for a meal we prepared with our own hands. You will receive the recipes via WhatsApp so you can bring the flavors of Akko into your home kitchen.
