Michal Mor Melamed, the dairy’s cheese-maker, is a veteran speech and language therapist who stumbled across the world of cheese by chance.
In 2005 Michal went on a paragliding vacation in Switzerland’s Bernese Alps. The weather was not welcoming so she traveled the area, saw how hard-cheese is made in the Swiss mountains – and fell in love.
Upon Michal’s return to Israel, she took to studying the field of cheese and milk at Ruppin Technological College, worked for several local dairy farms and even traveled to Switzerland to study the making of hard cheese in traditional dairies.
That is how the dream of opening her own dairy was born. She moved to the Galilee, settled in Kfar Kisch, opened her dairy and later, the dairy’s store.
Today Michal is an honorary member of the global cheese guild, making medal-winning cheeses that represented Israel at the World Championship Cheese Contest.
Nowadays, the dairy farm is located at Lotem and House of Cheese was built next to it, inviting visitors to an experience of artisanal cheese.
